Happy First Day of Summer!
Summer is a glorious time to enjoy so many things the world has to offer come this time of year. There are fresh fruits that tastes like little heaven drops, farmer’s markets that are thriving with fresh picks every week, and then sunshine that’s bringing warmth and beauty to the world around!
Children are off of school, family’s take vacays, and it’s the time that the world seems to understand the need to slow down and enjoy the simple moments. One of my favorite things lately is sitting out on the porch (in the morning, becasue… #summersoutherhumidity), listening to the birds sing praises as they delight in starting a brand new day.
Anyways – today, I’m doing something a little different and sharing one of my absolute FAVORITE summer recipes! As you know, I’m a fall girl, but there are a few things I truly love about summer… And one of them 100% is making mango salsa!
When I was in Ethiopia a few years ago for a mission trip, I absolutely fell in LOVE with mangos, and have been pretty obsessed ever since. Mangos are one of those fruits that are really only good in the early summertime, so I always have to make my favorite mango salsa recipe (from my mom) at several times through the summer.
We have family coming to stay with us tonight, so I thought I’d share the recipe (and make a fresh batch) to share with them tonight!
Mango Salsa Recipe
Ingredients:
2-3 Mangos, diced
1/2 Red Onion, chopped
2-3 Bell Peppers, seeded + chopped
8 Strawberries, chopped
1 jalapeño, seeded + chopped
1 lime or lemon, freshly squeezed
1/2 cup of cilantro, finely chopped
1 pinch of salt
Dash of hot sauce (optional)
Instructions:
1. Wash all your fruit (I love Trader Joe’s fruit wash)
2. Have a plate ready to put all your leftover pieces for composting (DIY compost bucket coming soon to the blog).
2. In a serving bowl, combine all the sliced + diced fruit together, and mix thoroughly.
Et viola, you’re done! I would recommend putting in the fridge for a few hours, to let the flavors blend together and really pop. But if you’re impatient, you’re more than welcome to start eating! Just the longer the flavors blend together, the more delicious it will be!
We honestly eat this just with quinoa chips from Aldi, but you can put it on your favorite salad, on top of a 1/2 on avocado, on grilled chicken or I’ve heard it’s great on fish!
